Golden Delights
1 box yellow cake mix
1 egg
1 stick of butter
1 box of powdered sugar
1 8oz. package of cream cheese
2 eggs
Preheat oven to 325. Mix the first 3 ingredients together and press into the bottom of a 15 x 10 in. pan to form the crust. Mix the last 3 ingredients together and pour on top of crust. Bake for 45 min. Cool completely before cutting into squares. Try eating only one. Enjoy!
Blackberry Cobbler (Courtesy of The Pioneer Woman)
1 stick butter
1 1/4 cup sugar
1 cup self-rising flour
1 cup milk
2 cups blackberries (fresh or frozen)
Melt butter in a microwavable dish. Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all together really well. Butter a baking dish. Of course rinse and pat dry your blackberries if you're using fresh ones.
Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter, distributing evenly. Sprinkle the remaining 1/4 cup sugar over the top.
Bake in the oven at 350 degrees for 1 hour, or until golden and bubbly. If you want, you can sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it's done. Serve with vanilla ice cream if you like. I like. I like a lot. What's cobbler without ice cream, right?
Sweet-n-Sour Meatballs
This is a kid (and hubby) favorite at my house!
For Meatballs:
1-1 1/2 lbs.ground beef
1 egg
about 1 cup of oatmeal or breadcrumbs
salt and pepper to taste
For Sweet-n-Sour sauce:
1/4 cup brown sugar
1/4 cup ketchup
1/2 cup white vinegar
2 TBS Worcestershire sauce
1/4 tsp paprika
To make meatballs:
Combine meatball ingredients and shape into walnut size meatballs. You can pan-fry, bake, or broil these. Whatever you're more comfortable with or have the time to do. Cook until no longer pink inside. Remove from pan and set aside.
To make sauce:
Combine all sauce ingredients in a sauce pan or skillet. Heat over medium-low heat until bubbly. Add meatballs to sauce and stir gently until meatballs are coated with sauce. Let simmer for 5 to 10 minutes, stirring gently every few minutes to coat meatballs. Goes great with mashed potatoes or as a stand alone side for a party or potluck. Enjoy!
